Ingredients

  • 1 cup diced prepared refrigerator pickles see recipe ideas in NOTES
  • 2 garlic cloves minced
  • 1 cucumber diced
  • 1 cup diced fresh or thawed frozen pineapple
  • 1/2 cup diced red onion
  • 1/2 inch fresh ginger peeled and grated
  • 1 tablespoon fresh dill chopped
  • 1/4 cup pickle brine from the pickle jar
  • 1/2 tsp dry ground mustard
  • Sea salt and black pepper

Instructions

  1. Start by combining the diced pickles, minced garlic, cucumber, pineapple, red onion, grated ginger, and chopped dill in a bowl. Mix well to combine all the ingredients.
  2. In a separate small bowl, whisk together the pickle brine and dry ground mustard.
  3. Pour this mixture over the salsa and toss to coat everything evenly.
  4. Season with sea salt and black pepper to taste.
