I know it may seem like a weird time to be making soup but sometimes these cravings come out of nowhere right? I was just thinking the other day that I miss wonton soup. In my SAD days (Standard American Diet) I would have considered this soup to be quite healthy. Obviously from an AIP standpoint my old favourite just wasn’t going to cut it.

So I decided to make some bone broth and throw some veggies in and see what happened. Luckily for me and you it turned out pretty good and reminded me of traditional wonton soup without the wontons I suppose. But I promise you won’t even miss them because the flavour is the same and its very filling!

Let me know if you try this recipe out or if it’s too hot for soup where you are, then save it for a colder rainy day.

Wonton Soup

AIP friendly Wonton Soup

Ingredients

  • 8 cups homemade pork broth I used my instant pot to make this
  • 2 cups left over pulled pork Or 1 pound of browned ground pork
  • 1 head cauliflower chopped into florets
  • 2 heads broccoli chopped into florets
  • 8 ounces mushrooms sliced
  • 1 bunch green onions sliced thinly
  • 3 whole carrots peeled and chopped
  • 1 tsp sea salt adjust to taste (your broth may already be quite salty)
  • 8 tbsp coconut aminos 1 tbsp per bowl when serving

Instructions

  1. Heat 8 cups of pork broth over medium heat on the stove. Measure out your 2 cups of pulled pork or 1 pound of cooked ground beef and set aside in a bowl.
  2. Wash and chop cauliflower, broccoli, green onions, and carrots. Wipe your mushrooms down with a wet paper towel, then slice.
  3. Once your broth is warm, add in all your veggies and bring to a boil. Turn down to low, cover, and simmer for 20 minutes or until your veggies are tender. Stir occasionally.
  4. Add in your pulled pork or ground pork, stir and simmer for 5 minutes more. Add in salt and taste. Adjust if needed.
  5. Pour soup into a bowl. Add in 1 tbsp of coconut aminos and sprinkle with additional chopped green onions if desired. Serve right away.

Recipe Notes

This soup will store in the fridge for 3 days. It also freezes really well. Enjoy!
