So if you are currently following the autoimmune protocol then you know that left overs are officially your best friend. You do a happy dance when you have enough left overs for more than one meal and you will literally bite anyone’s head off if they eat your left overs. You have even gone so far as to write your name on your left overs with a warning sign that says “DO NOT EAT ME OR ELSE!”

Okay…maybe you haven’t gone that far but I bet you have wanted to. I remember when I was three months into AIP, feeling overwhelmed and tired of cooking and my fiancé ate the left overs I was planning on having for lunch the next day. I cried. I ACTUALLY cried. Sure I can laugh about it now but at the time I remember being devastated that it was 9:00 at night and I now had no lunch for work the next day. Enter canned Tuna (a life saver)..but more on that another day.

Since then I have gotten a little less crazy and don’t cry when someone eats my left overs but I have also gotten a little more creative with my left overs. I use to eat the exact same left overs for 3 days in a row. BORING. So I decided I would do a post on a very simple recipe (that you can change out for whatever you have on hand) for repurposing leftovers. This way you also won’t die of leftover boredom!

Chicken Bacon Veggie Skillet

A quick weeknight meal that will use up those leftovers. Substitute pork/beef/lamb/bison for the chicken. Use whatever veggies or starches (squash, plantains, sweet potatoes) you have left over.

Prep Time 10 minutes
Cook Time 15 minutes
Total Time 25 minutes
Servings 2 people

Ingredients

  • 1 or 2 piece(s) chicken breast
  • 3 slices bacon nitrate free
  • 2 tbsp bacon grease left over from cooking the bacon
  • 1 cup spinach
  • 2 cups zucchini and mushrooms
  • 1 cup beets and sweet potatoes

Instructions

  1. Saute the bacon on medium heat until crispy and brown on both sides. Remove and set aside.
  2. Chop the chicken into bite sized pieces. Place in the pan with the bacon grease. Cook until crispy.
  3. Add the rest of the ingredients (veggies/starches) to the pan. Cook for 5 minutes (or until warm). Taste and add salt as needed.
  4. Serve on two plates or store one serving for later. Lay the slices of bacon on top or crumble on top. Sprinkle with your favourite AIP “cheese” for an extra kick.

Recipe Notes

AIP cheese recipe used  is from Zesty Paleo. It’s delicious, but this dish also tastes just fine without it!

If you can’t find AIP friendly bacon, simply use side pork instead and season with salt.
