Treat yourself with anti-inflammatory Paleo Chocolate Crispy Squares

Just because you have eliminated gluten, dairy, and refined sugar from your diet doesn’t mean you have to eliminate the treats too!

Enjoying a dessert here and there on occasion helps to make long-term allergy-friendly diets SUSTAINABLE for you. When we don’t feel deprived, we are more likely to discover success in sticking to an anti-inflammatory diet like Paleo or the Paleo AIP.

The key to keeping desserts anti-inflammatory is to not overindulge. Especially on the Autoimmune Protocol, since experts suggest not exceeding 20 grams of dietary sugars per day while you work to reduce inflammation in the body. (The kind of inflammation that contributes to autoimmune symptoms.)

If you find yourself having difficulty controlling how many treat bars (or slices of AIP Chocolate Cake, or AIP Chocolate Tigernut Cookies) you eat after you make a batch, I have an easy life hack for you! Simply freeze individual portions in small food storage containers and only take them out to thaw once a week for your treat.

Making your Paleo Chocolate Crispy Squares is so easy:

First you’ll make the Sweetened Condensed Coconut Milk.

I promise you it’s not complicated or daunting! All you have to do is simmer a can of full-fat, additive-free coconut milk in a pot with some honey or maple syrup, your choice.

Once it is thick and nicely colored, you’ll know it’s ready to use in the rest of the recipe. You could easily double the sweetened condensed coconut milk, too, and save the other half for future recipes. Just note that it will keep in the fridge for up to a week, or you can freeze it flat for longer storage.

Next you’ll combine the remaining ingredients, then bake!

It’s easy to stir together the condensed milk you just made, the Lovebird Unsweetened Cereal, and the coconut sugar in a large bowl. (Take a taste test, too…no one’s looking!)

Spread this mixture into a baking dish, then top it all off with some and the dairy-free chocolate chips so you get that melty, chocolate topping layer while it bakes away! In 15 minutes you’ll have a beautiful batch of chocolate-y bars ready to cool before you slice and enjoy.

NOTE: Be sure to use this AIP Carob Chips recipe in place of the dairy-free chocolate chips if you need to keep your Paleo Chocolate Crispy Squares compliant with the Paleo Autoimmune Protocol. Cocoa is a stage 1 reintroduction that is reintroduced after a minimum of 30 days on the elimination phase of the protocol.

Chocolate Crispy Squares (Makes 16 squares)

Paleo Chocolate Crispy Squares come together in about an hour & with 5 ingredients! With AIP Autoimmune Protocol option.

Cook Time 50 minutes

Ingredients

Sweetened Condensed Coconut Milk

  • 1 can of full fat coconut milk
  • ¼ cup of honey or maple syrup

Squares

  • 1 batch Sweetened Condensed Coconut Milk (see above)
  • 6 cups Unsweetened Lovebird Cereal (1.5 boxes)
  • 2 Tbsp coconut sugar
  • ½ cup dairy-free chocolate chips (for AIP, see Carob Chips recipe in NOTES)

Instructions

  1. Make the Sweetened Condensed Coconut Milk. Mix the coconut milk and the honey or maple syrup in a medium sized pot and bring to a gentle boil over low heat. Simmer on low heat for 30-40 minutes or until it has decreased by ⅓ and the color is starting to change. Whisk occasionally.

  2. Preheat the oven to 350 degrees Fahrenheit.

  3. Add approximately half of the Sweetened Condensed Coconut Milk and half of the Lovebird cereal to a large bowl and stir.

  4. Add the rest of the cereal and the rest of the Sweetened Condensed Coconut Milk to the large bowl. Sprinkle in 2 Tbsp of coconut sugar and then stir to mix all together.

  5. Line an 8×8 baking dish with parchment paper. Spoon the cereal mixture into the lined baking dish.

  6. Bake for 15 minutes uncovered.

  7. Remove from the oven and add your dairy free chocolate chips or your carob chips on top. Put back in the oven for 2 minutes or until melted.

  8. Remove from the oven and spread the melted chocolate or carob over the squares until thoroughly covered.

  9. Cool completely before cutting into squares. Store in the fridge for up to 4 days. Remove from the fridge 15 minutes prior to serving.

Recipe Notes

Use this AIP Carob Chips recipe in place of the dairy-free chocolate chips to keep this recipe Paleo Autoimmune Protocol compliant.

    The taste is good but mine turned out very chewy and not crispy at all. Not sure what I did wrong. I thought I followed recipe exactly.

      Hi Bev! These are semi-modeled after “rice crispy treats,” which are a little chewy and crispy. Grain-free treats tend to have slightly different texture than grain-filled ones. So sorry these did not meet your expectations!
