Paleo AIP Velvet Cauli Bacon and Truffle Soup

This Paleo AIP Velvet Cauli Bacon and Truffle Soup is rich and creamy! It’s full of nutrients and protein, too.

Ingredients

  • ½ lb nitrate-free, nightshade-free bacon, chopped
  • 1 medium sweet onion, chopped
  • 1 large head cauliflower, cored and chopped
  • 1 tsp ginger powder
  • 5 cups chicken bone broth
  • 2 to 4 Tbsp truffle oil (olive oil-based)
  • sea salt, to taste

Optional toppings: chopped fresh herbs, sauteed mushrooms

Instructions

  1. Add bacon and onion to a large soup pot. Turn heat to medium, and cook bacon until it starts to caramelize (about 10 minutes).

  2. Add the cauliflower, ginger, and broth. Cover and bring to a boil, then immediately turn down to a simmer. Cook for about 30 minutes or until the cauliflower is very soft.

  3. Blend using an immersion blender in the pot, or carefully transfer soup in batches to a countertop blender in batches to puree until velvety smooth.

  4. Blend in the truffle oil and sea salt to taste. Serve hot in bowls topped with fresh herbs or sauteed mushrooms and enjoy!
