You’ll love this egg-free meatloaf that you can simply mix, form, and cook worry-free in the slow cooker. It’s Paleo Autoimmune Protocol compliant, has less than 10 ingredients (including spices and seasonings) and is ready to cook in about 5 minutes.

Making this delicious recipe is the slow cooker helps to ensure that it stays extra juicy and tender. In a slow cooker, the moisture that usually escapes foods when baking in an oven gets locked inside instead.
For recipes like meatloaf, this is a mega win because you don’t have to worry about dried out ends. This is also a bonus because if for some reason you accidentally overcook the meatloaf a little in the Crockpot, it just ends up making it more tender, not burnt!
No slow cooker? No problem!
Since not all of us own a slow cooker, you can still make this delicious meatloaf in the oven! I suggest following the instructions in step 1 first. Then press the mixture into a large loaf pan. You may need 2 loaf pans, depending on the size of your loaf pans and how large your onion and carrot were.
Next, cover your loaf tightly with foil before baking in a 350 F oven for about 1 hour, or until the loaf is cooked through in the center. You can finish the recipe by following steps 5 and 6, then enjoy!
Whichever cooking method you choose, the AIP tomato-free ketchup topping is optional – but I highly recommend it if you want more of an authentic presentation!

Paleo AIP Slow Cooker Meatloaf (Whole30, Gluten-Free)
Get your Crockpot ready for this tender and juicy Paleo AIP Slow Cooker Meatloaf. It’s Whole30 & gluten-free, too!.
Ingredients
- 2 pounds ground beef
- 1 large onion, finely minced
- 1 small carrot, finely minced
- 4 cloves garlic, finely minced
- ⅓ cup tigernut flour
- 1 tablespoon coconut flour (sub 2 Tbsp cassava flour for coconut-free)
- 2 tablespoons herbs de Provence
- 1 teaspoon ginger powder
- 1 ½ tsp sea salt, or to taste
- ½ cup AIP ketchup (suggestion in notes) Optional
Instructions

Add beef, onion, carrot, garlic, flours, and dry seasonings to a medium mixing bowl. Gently massage with your hands until well combined, but do not overmix or the loaf will become tough during cooking.

Transfer the mixture to the crock of a slow cooker. Form it into a loaf shape.

Cover and cook on low for 4-6 hours or until the center is cooked through to 165 F.

Optional: Top with ½ cup of AIP ketchup, then cover and cook for 10 more minutes.

Slice and serve with your favorite side dishes like mashed cauliflower and bacon-braised greens!

Hi Tina,
You could use any ground meat you like in place of the beef! If the meat is very dry / low fat, you may wish to incorporate 1-2 Tbsp of melted coconut oil or rendered animal fat of your choice when stirring the raw mixture.

This looks wonderful! Can I sub Cassava or coconut flour for the tigernut flour?

The good news is that since this isn’t a pastry, this is one of the AIP recipes where you definitely CAN swap out a flour substitute! 🙂
You will likely need to play with the ratios a bit, though. Cassava flour is more “sticky” than tigernut flour, and coconut flour has more of a “drying” effect versus tigernut. Start with just a bit and then check if the texture of your loaf mixture is satisfactory to you before adding anymore flour. With either flour option mentioned above, you will probably need a bit less than the amount listed for tigernut.
