Let’s take it back to “lunch lady land” with this lunchroom staple that’s ready in under 30 minutes. Unlike the classic sloppy joe, this recipe contains no tomatoes or chilis, which are both nightshades that are eliminated on the first phase of the Paleo Autoimmune Protocol.

It’s also free of gut-disruptive corn syrup, stabilizing gum, and fruit-based spices like black pepper that you would discover when you read the label of pre-made sloppy joe sauce. But not to worry, this version is full of so much flavor, you won’t miss these aforementioned inflammatory foes!

With flavors like ginger, honey, and turmeric, plus my favorite tangy tomato-substitute combo (that I’ll tell you a bit more about below) you won’t miss the original one bit, because this version is so much tastier!

Slop, Sloppy Joe

Are you singing along with me yet? This easy sauce and simple skillet dish are definitely song-worthy!

The sauce comes together in the blender in a matter of minutes. This is especially so if you have some pre-cooked beets on hand. These are my favorite beet-cheat which I know you’ll love for keeping on hand in the kitchen!

You can definitely use your own homemade cooked beets, though. Here are some ways to easily cook beets at home. (Just be sure to avoid any non-AIP ingredients mentioned in the methods.) Batch cook your beets, then freeze them individually for quick sauce making.

When combined with pumpkin puree, apple cider vinegar, and seasonings, this combo makes an excellently simple tomato sauce replacement that will have you wanting not for nightshades!

Paleo AIP Sloppy Joe Filling (Gluten-Free)

Ingredients

SLOPPY JOE SAUCE

  • 3 cloves garlic, roughly chopped
  • 1 small cooked beet, chopped (about ½ cup)
  • ¾ cup pumpkin puree
  • 2 tablespoons apple cider vinegar
  • 1-2 tablespoons honey or maple syrup
  • ½ – ¾ cup bone broth or water
  • ½ tsp turmeric powder
  • ¾ tsp ginger powder
  • 1 tsp sea salt, or to taste

SLOPPY JOE FILLING

  • 1 Tbsp coconut oil
  • 1 large onion, diced
  • 1 lb ground bison or beef
  • sea salt, to taste

Instructions

  1. Add all SLOPPY JOE SAUCE ingredients in order listed to a high-speed blender.

  2. Puree on medium speed until nearly smooth. Add extra broth or water if needed to thin the sauce as desired.

  3. Taste and adjust seasonings, then set sauce aside while you make the meat.

  4. Add oil to a large skillet over medium heat. When hot, add onion and cook for about 7 minutes, stirring occasionally, or until golden brown and tender.

  5. Crumble in the ground bison or beef, breaking it into a chunky mince with a spatula.

  6. Stir in the sauce (reserving ¼ cup of the sauce for garnish if desired).

  7. Simmer for 8 to 12 minutes or until thickened to your liking. Taste and season with salt if needed.

  8. Serve the filling over halved AIP rolls and/or AIP coleslaw, topped with AIP pickles, and with AIP plantain fries on the side, if desired.
