Paleo AIP Pickled Red Onions
Equipment
- Mandolin -or- Very sharp knife
- 1 2-cup mason jar with lid, sterilized
Ingredients
- 1 small red onion
- 1 small garlic clove, smashed
- ½ cup apple cider vinegar
- ½ cup filtered water
- 1 Tbsp honey
- 2 tsp sea salt
Instructions
- Use a mandolin or a very sharp knife to slice the onion very thinly.
- Add onions and garlic clove to the mason jar, then set aside.
- To a small pot over medium heat, add vinegar, water, honey, and salt. Stir until honey and salt dissolve (about 1 to 2 minutes).
- Cool liquid completely, then pour it over the onions.
- Seal the jar, then allow the onions to sit at room temperature overnight to pickle.
- Store in the fridge for up to 14 days.
