Summer is here, and it’s the perfect time to enjoy fresh salads and marinated meats and veggies! But if you’re following a Paleo AIP diet and also need to avoid high FODMAP foods due to SIBO or other digestive issues, finding a delicious salad dressing or marinade can be a challenge. 

Most store-bought dressings contain whole garlic and bulb onions, which are high in FODMAPs and can also be problematic for those with SIBO. But fear not! With a little creativity and some simple and delicious ingredients, you can whip up a tasty Paleo AIP low-FODMAP dressing or marinade that will add flavor and nutrition to your meals this season

This Paleo AIP Low-FODMAP Salad Dressing or Marinade is Easy to Make

After you gather your ingredients (AIP-compliant garlic-infused oil, vinegar, lemon, pure maple syrup, ginger, fresh and dried herbs, and sea salt), add them all to a large glass jar. Seal with a tight-fitting lid, then shake it up! This delicious and simple vinaigrette will keep in your fridge for up to 1 week. 

If you use extra-virgin olive oil: Since olive oil hardens when chilled, allow the jar of dressing to rest on the countertop at room temp for up to 30 minutes before serving. This allows the oil some time to return to a softer, more mixable state. You’ll want to shake the jar vigorously before pouring the dressing.

How to Use this Dressing

This dressing is versatile and can be used in many ways! Try it on a simple green salad with sliced cucumbers, green onions (tops only), and chopped low FODMAP fruit like strawberries.

You can also add the prepared dressing to a food storage bag or container, then add your favorite ingredients to marinate. Try this with low FODMAP AIP veggies, poultry, seafood, beef, or pork. Seal, then marinate overnight before grilling or broiling. You can also simply drizzle it over roasted veggies for added flavor!

Oil cooling time (if making the garlic-infused oil) 2 hours

Servings 2 cups

Ingredients

  • cup low-FODMAP garlic-infused AIP-compliant oil see NOTES or plain extra-virgin olive oil
  • ¼ cup white wine vinegar
  • Juice of ½ lemon
  • 1 Tbsp maple syrup
  • ½ ” grated fresh ginger root
  • 1 Tbsp minced fresh parsley
  • 1 minced fresh rosemary or herb of choice
  • 2 Tbsp minced fresh chives
  • 1 tsp dried tarragon
  • 2 tsp sea salt or to taste

Instructions

  1. Prepare and cool the low-FODMAP garlic-infused oil if using.
  2. Add oil and all remaining ingredients to a 2-cup or larger lidded glass jar.
  3. Seal with the lid, then shake vigorously before adding to your favorite salad.
  4. Store in the fridge for up to 7 days.
  5. After dressing is chilled, to serve: Allow the jar to rest on the counter at room temperature for 15 to 30 minutes before shaking vigorously and using in your favorite recipe. (Olive oil hardens when chilled, so this step allows the oil time to return to a softer, more mixable state.)
