Autoimmune Protocol Meal Time – In Practically No Time at All
Once you have your oven heated, it’s all smooth kitchen sailing from there! All you have to do to get started prepping this easy weeknight dinner is to grease a baking dish with tallow or your preferred fat.
Next, you’ll add all the coconut milk or homemade tigernut milk and the seasonings to the baking dish, and whisk until it looks like golden milk! Add pastured organic chicken to the dish, and use tongs to toss to coat to cover the chicken in all of that wonderful flavor.
You only need to bake this for about 30 minutes or until the chicken is just cooked through so that it remains juicy, tender, and scrumptious. The fragrance that wafts through your kitchen is highly aromatic and drool-inducing…just a fair warning!! 😉
What to Serve with Your Chicken
- Serve your Paleo AIP Golden Milk Chicken whole or sliced over steamed cauliflower rice with toasted tigernut slices or unsweetened shredded coconut on top.
- Layer the chicken sliced (warm or chilled) on top of mixed raw greens with cucumber and this AIP Avocado Ranch Dressing.
- Try your chicken shredded, then add mashed avocado as “mayonnaise,” with unsulphured raisins and sliced scallions thrown in for a unique chicken salad!

Paleo AIP Golden Milk Chicken (Dairy-Free, Gluten-Free)
Ingredients
- 1 Tbsp tallow or other AIP compliant fat
- 1 cup additive-free coconut milk (for coconut free: see Tigernut Milk recipe in NOTES)
- ¼ cup fresh cilantro, finely minced (plus more for garnish if desired)
- Juice of 1 large lemon
- 1 Tbsp coconut aminos (for coconut free: use gluten-free fish sauce to taste)
- 1 Tbsp honey or maple syrup (optional; omit to keep this low carb)
- 1 tsp ground turmeric
- 1 tsp ground ginger
- 1 dash each ground clove and ground mace
- ¼ tsp ground cinnamon
- 1 tsp sea salt (or to taste)
- 2 lbs chicken breasts or thighs
- Aluminum foil (to cover the baking dish)
Instructions
- Heat oven to 375 F. Grease a 9”x13” baking dish with tallow or preferred fat.
- Add milk, cilantro, lemon juice, aminos or fish sauce, maple syrup (optional), and dry seasonings to the dish, and whisk gently to combine.
- Add the chicken to the dish, and use tongs to toss to coat.
- Cover the baking dish with foil, then bake for 30 minutes or until chicken is just cooked through but not overcooked. Garnish with extra cilantro if desired.
- Serve whole or sliced over cauliflower rice with toasted tigernut slices, on top of mixed greens with cucumber and AIP dressing, or even shredded with mashed avocado as “mayonnaise”, raisins, and scallions for a unique chicken salad.

I can’t believe there are no comments here. This is delicious and so easy. That is a winner, winner chicken dinner if there ever was one! After the chicken baked, I put the sauce in a pan and brought up to boiling and put an arrowroot slurry in and cooked for one minute. It made a delicious gravy that my family put over rice.
