This Paleo AIP Arugula Fig Flatbread is a classy version of pizza! It’s dairy-free, grain-free, gluten-free, and nightshade-free.
This flatbread recipe is such a beautiful way to make a pizza! I think it is perfect for brunch, dinner, or even an egg-free breakfast. Since it contains no nightshades, dairy, gluten, or eggs, it’s Paleo Autoimmune Protocol elimination phase compliant.
You’ll love the nutty flavor of the nut-free tigernuts in the crust and how they lend the bread a playful texture. It’s easy to make when you use a pre-packaged baking mix that only calls for added water and oil. Though I also give you a couple of AIP flatbread pizza crust recipe suggestions if you’d rather make your own from scratch ingredients.

When It’s Fig (and Pizza) Season
Figs come into season locally in two flurries. The first season is in June, while the second season runs from around August through October. This means that you can enjoy this AIP-compliant fruit in late spring, summer, and autumn as well!
If you cannot seem to get your hands on fresh figs, you can use dried, unsulphured figs instead. Since these are sweeter and more dense, you will only need half as many dried figs as you would fresh.
If you ask me, pizza is in season year-round, and it doesn’t have to be complicated to make. With this AIP tigernut pizza crust mix, all you have to do is add water and a little oil before baking up delicious grain-free crusts!

AIP Pizza Topping Ideas
Maybe you’re not quite in the mood for a Paleo AIP Balsamic Fig Flatbread, but rather a more traditional flavor. Try these ideas below to change it up and I promise you won’t be disappointed in your customized pizza-pie!

Paleo AIP Balsamic Fig Flatbread (Dairy-Free, Grain-Free)
Ingredients
CRUST (or use one the of the flatbread pizza crust recipes in NOTES)
- 1 bag AiPeazy Tigernut Mix
- 1 cup cold filtered water
- 3 Tbsp melted coconut oil (plus more for greasing)
TOPPINGS
- 2 batches AIP Mozzarella Cheese (see recipe in NOTES)
- 2 cups fresh figs (or 1 cup dried figs), chopped
- 1 cup mixed baby greens
- Balsamic Honey Drizzle, to taste (see recipe below)
BALSAMIC HONEY DRIZZLE
- ¼ cup raw local honey
- 2 tablespoons balsamic vinegar
- 1 dash sea salt
Instructions
- Prepare and bake the pizza crusts according to package instructions.
- Make the AIP Mozzarella Cheese, then break it into bite-sized chunks.
- Top the flatbreads with cheese, figs, and greens.
- Drizzle with the Balsamic Honey Drizzle, then slice and enjoy!
