Modified AIP Pickle Pineapple Salsa (Nightshade-Free)
Ingredients
- 1 cup diced prepared refrigerator pickles see recipe ideas in NOTES
- 2 garlic cloves minced
- 1 cucumber diced
- 1 cup diced fresh or thawed frozen pineapple
- 1/2 cup diced red onion
- 1/2 inch fresh ginger peeled and grated
- 1 tablespoon fresh dill chopped
- 1/4 cup pickle brine from the pickle jar
- 1/2 tsp dry ground mustard
- Sea salt and black pepper
Instructions

Start by combining the diced pickles, minced garlic, cucumber, pineapple, red onion, grated ginger, and chopped dill in a bowl. Mix well to combine all the ingredients.

In a separate small bowl, whisk together the pickle brine and dry ground mustard.
