Let me start off by saying that pasta and pizza are probably the foods I miss the most. Perhaps I was Italian in another life. Obviously there are AIP versions of both of these dishes but still I miss the originals from time to time.

After travelling to Italy on my honeymoon I was inspired by all the different pasta dishes I saw in the various regions. When I got home I wanted to recreate a light pasta dish that I saw when I was visiting Amalfi, Italy. Of course I needed to make some changes in order to make it Autoimmune Protocol friendly but I still think this dish looks a whole lot like the original and it tastes delicious, too! My other condition was that it had to be a quick and easy weeknight meal – conditions achieved!

Sardines are included in this recipe because they are very nutrient dense (something we strive for on AIP). I hardly even noticed they were there. If you are not fond of sardines then you could switch them out for tuna, salmon or mussels.

Mediterranean Pasta

A mediterranean inspired AIP Pasta dish that is quick and easy to make!

Ingredients

  • 1/2 bunch sweet potato noodles
  • 1/2 cup black olives, pitted
  • 1 tbsp oregano
  • 1 tsp salt
  • 1 tbsp avocado oil
  • 1 package sliced mushrooms
  • 2 cups chopped kale
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 can coconut milk
  • 2 cans sardines in water

Instructions

  1. Bring a medium sized pot of water to a boil for the sweet potato noodles. Salt the water once it has come to a boil. Cook the noodles 5-6 minutes. Then rinse twice and set aside.
  2. In a large pan, add avocado oil over medium high heat. Saute the mushrooms until browned. Add in the kale and sardines and sauté for 2-3 minutes more.
  3. Pour the coconut milk into the pan along with the oregano, garlic powder, onion powder, and salt. Stir and bring to a boil then turn down the heat to a low simmer for 5 minutes.
  4. Add the rinsed noodles to the pan and stir to incorporate. Then add in the olives and stir. Remove from heat and serve immediately.

      Hi Hildy, I get sweet potato noodles from local Asian stores but you can also order on amazon or walmart. The brand I get is Assi.
