Core Paleo AIP Watermelon Granita Mocktail
Ingredients
- 1 ripe personal size watermelon
- 1 dash coarse sea salt
Instructions

Slice the flesh from the watermelon, then remove any black or hard white seeds. Discard or compost the rind.

Add watermelon flesh to a blender. Puree until smooth.

Transfer the blended watermelon to a freezer-safe storage container with a lid (preferably one that is as wide as possible).

Cover and place in the freezer for 30 minutes. Remove from the freezer, then break up any frozen bits and stir well. Return to the freezer.

Repeat step 4 until all liquid is fully crystallized (this may take around 4 hours).

Spoon granita into serving glasses, then garnish with salt. Enjoy!
