It has been so long since we last chatted and I thank you all for being patient with me these past few months!

This has been three years in the making and I did the program while working full time so to say I am happy to be finished would be an understatement! The exciting thing now is that I will be beginning to work on launching my nutrition business. This was a dream of mine 3 years ago and I am so excited that I can now finally start to make it happen.
If I have learned anything throughout these past 3 years its that you are never too old to try something new and take a risk…oh and hard work pays off but you need to consistently show up. So there is my motivational advice for you all!
But in other news what this means for all of you is that I can get back to blogging and recipe developing. This week I am actually working on 5 new quick and easy weeknight meals as per your request on Instagram (If you aren’t following me on Instagram and want to know what I eat pretty much everyday…then go follow me).
Okay now onto the recipe- I am a cookie dough lover. My appreciation for cookie dough started at a very young age despite my mom telling me that it wasn’t safe for me to eat because it had raw egg in it. That most definitely did not prevent me from sneaking a lick of the spatula or beater when she wasn’t looking!
Fast forward 20 years or so and I thought my cookie dough eating days were over, but it turns out AIP cookie dough is even better than the real deal because hello it does NOT have raw egg in it! So really this is a win-win. You can not only feed yourself raw cookie dough but your kids too and you don’t have to worry about the raw egg!
You are going to love this recipe even more because it takes 5 minutes to prepare- yes just 5 minutes. So when you are craving something sweet but you have zero energy to bake anything- just go make yourself a batch of cookie dough. Just promise not to eat it everyday though because we want to live our best life but in order to do that, we gotta be responsible with the cookie dough. Adulting is hard stuff.
Now let’s talk substitutions- You could replace the tiger nut flour with almond flour if you have reintroduced it. You could also replace the coconut flour with cassava flour. I used avocado oil since I have become sensitive to coconut oil, but coconut oil will work too. To make this recipe AIP you will need to make carob chips (this is my favorite carob chip recipe) or use raisins. If you have reintroduced chocolate then you can use a dairy free chocolate chips. I like the brands Enjoy life and Lily’s.

Chocolate Chip Cookie Dough
A quick and easy edible cookie dough that is AIP, Paleo and Vegan!
Ingredients
- 1 cup tiger nut flour
- 1/4 cup coconut flour
- 1/4 cup maple syrup
- 1 tsp vanilla extract alcohol free
- 2 Tbsp avocado oil
- 1/8 tsp sea salt
- 1/4 cup chocolate chips carob chips or raisins (AIP option)
Instructions

In a medium sized bowl, stir all ingredients together (except chocolate chips) until combined.

Stir in the chocolate chips.

Serve immediately or store in the fridge in a glass dish for up to 4 days.

Dee-licious!!! I rolled them into bite sized balls for easy travel. I also added some marine collagen.
Hi! Have you ever tried making these into baked cookies to see how they would taste or have you only eaten them as dough?

They would work but it would be a bit dry as it is missing some of the ingredients I would normally put into my cookie recipes. Be sure to check out my chocolate chip cookie recipe instead!
