I can’t believe I am already saying this but…summer is almost over. I enjoyed these popsicles all summer long and made a new batch almost every week! I don’t generally eat popsicles in the cooler months so I am going to make one last batch of these this weekend before I tuck this recipe away until next year.

Where I live, it is already getting cooler at night and when I wake up I have to put on socks and a house coat brrrr….. So while I might be saying good-bye to popsicles you may still be enjoying your summer. And for those of you in the warmer climates you could enjoy these all year round!

Feel free to change out the fruit to whatever you like. I have made these with strawberries and a mixture of blackberries & raspberries. Both are equally delicious!

Blueberry Coconut Milk Popsicles

Blueberry Coconut Milk Popsicles sweetened with honey.
Prep Time 5 minutes
Total Time 5 minutes
Servings 10 popsicles

Ingredients

  • 1-2 tbsp honey unpasteurized, local
  • 1 can coconut milk aroy d brand
  • 1/2 cup blueberries fresh or frozen
  • 2 tbsp collagen hydrolysate Great Lakes brand

Instructions

  1. Put all the ingredients into a blender and blend until smooth.
  2. Pour into popsicle moulds and put into the freezer until frozen (4-6 hours).

Recipe Notes

Change it up: Switch out the blueberries for your favourite berries!
