Paleo AIP Beef Stroganoff Mashed Potatoes Autoimmune Protocol

A creamy, beefy sauce served over fluffy, mashed nightshade-free potatoes is always a hit!

This can be served to people who aren’t even on the Paleo Autoimmune Protocol because it is so comforting and simple that they may not realize it’s AIP compliant (unless you tell them *wink*).

After a long day of work I adore being able to just quickly chop up some veggies (or pre-chop on Sunday) and cook them up in a skillet with some ground meat. The mashed potatoes whip up together easily as well…simply chop, boil, and mash! The mash can even be prepped and boiled ahead of time.

Paleo AIP Beef Stroganoff Mashed Potatoes Autoimmune Protocol

This was one of those recipes I came up with on-the-fly because I had some zucchini and turnip to use up and as always- I was craving comfort food.

Even though those two vegetables are not traditional ingredients in stroganoff, they’re what really up the flavor make this an AIP Stroganoff & Mashed Potatoes dish.

By adding more veggies in it’s a win-win recipe for both flavor and nutrient density.

One tip of mine for keeping AIP flexible and comforting in the kitchen:

I love keeping arrowroot starch and some cans of BPA-free coconut milk on hand at all times. I use the brand Aroy-D. You can thicken sauces with the arrowroot, or use it plus some coconut flour and an AIP seasoning blend for dusting meats before shallow-frying in some avocado oil.

Coconut milk can also be used in sauces, smoothies, or even refrigerated then sweetened with some honey and fluffed up to use as a whipped topping….like in my Strawberry Shortcake Muffins from my new book, AIP Gatherings!

Don’t have some of the ingredients in this AIP Stroganoff & Mashed Potatoes recipe on hand?

You can use up just about any vegetable in the sauce. Try using leftover shredded chicken, or use ground turkey or pork in place of the beef.

Give spinach or chopped celery a go if you don’t have zucchini. Try cubed butternut squash or cauliflower instead of the turnip. Portobello mushrooms definitely add a unique texture but any mushrooms will work. Change it up and get creative!

AIP Stroganoff & Mashed Potatoes

Nightshade-free mashed potatoes serve as a fluffy bed for this decadent, creamy, and beefy AIP sauce.

Ingredients

Stroganoff

  • 1 pound ground beef
  • 2 Tbsp avocado oil
  • 1 yellow onion finely chopped
  • 2 cloves garlic minced
  • 1 large zucchini sliced into quarters
  • 4 portobello mushrooms chopped into bite sized pieces
  • 1 Tbsp thyme fresh
  • 1 tsp sea salt
  • ¼ cup room temperature water
  • 1 tsp arrowroot
  • 1 cup coconut milk
  • ¼ cup nutritional yeast
  • ¼ cup fresh parsley optional

Mashed Sweet Potatoes

  • 2 medium white sweet potatoes
  • 2 turnips
  • 1 Tbsp lard or fat of choice
  • ½ cup bone broth
  • ½ tsp thyme
  • ½ tsp sea salt

Instructions

Stroganoff

  1. In a large pan saute the ground beef until cooked thoroughly (6-8 minutes). Remove the cooked beef and set aside.
  2. In the same large pan, heat the avocado oil over medium high heat. Add in the minced garlic and onion and saute for 2 minutes.
  3. Add in the zucchini and portobello mushrooms. Saute for 5-7 minutes until softened then sprinkle with thyme and sea salt. Stir.
  4. Mix the arrowroot with ¼ cup of room temperature water (stir quickly). Pour onto the veggies in the pan and stir to coat.
  5. Add the cooked beef back into the pan with the veggies.
  6. Mix the coconut milk with the nutritional yeast in a small bowl. Then pour into the large pan and stir. Simmer for 2-3 minutes.
  7. Remove from the heat and top with fresh parsley. Serve immediately.
  8. Cool and store in the fridge for up to 4 days.

Mashed Sweet Potatoes

  1. Peel and chop the turnips and sweet potatoes
  2. Boil until soft, approximately 20 minutes.
  3. Drain and mash until smooth. Stir in the lard, thyme, sea salt and ½ cup of broth.
  4. Serve warm and top with the stroganoff.
  5. Cool and store in the fridge for up to 5 days.

    Is the 1 tbsp thyme meant to be fresh or dried? Thanks!
