Ground beef is one of my go-to kitchen staples! I love that it freezes well, thaws quickly (especially when I store it flat in 1-pound portions), and is super versatile.

AIP Skillet Ground Beef 3 Ways

I am a fan of meal planning to get ahead, but sometimes I need to make something on the fly.

That’s chef speak for “unplanned and stat!” Ground beef has been my hangries-satiator for many a manic weeknight supper.

I wanted to share with you 3 ways that I use ground beef for quick and easy recipes.

AIP Skillet Ground Beef 3 Ways

Picadillo (Cuban)

AIP Skillet Ground Beef 3 Ways

1) Add 1 Tbsp coconut oil and 1 large chopped onion to a large skillet over medium heat. Sprinkle with salt and cook for 5 minutes or until softened. 

2) Crumble in 1 lb ground beef and 4 minced garlic cloves.

3) Stir in ½ cup sliced kalamata olives, 2 Tbsp raisins (optional), 2 tsp dried oregano, ¼ tsp ground cinnamon, ⅔ cup pumpkin puree, and ½ cup bone broth.

4) Add sea salt to taste.

5) Saute until simmering, then serve over chopped romaine topped with my Homemade Plantain Chips.

Barbacoa (Mexican)

AIP Skillet Ground Beef 3 Ways

1) Add 1 Tbsp coconut oil, 1 lb ground beef, 6 sliced green onions, and 5 minced garlic cloves to a large skillet over medium heat. 

2) Crumble the beef, then stir in 1.5 tsp smoked sea salt, 1 tsp ground ginger, ⅓ cup pumpkin puree, ¼ cup bone broth, and 1 Tbsp tapioca starch

3) Saute until simmering and thickened.

4) Serve inside baked, split white sweet potatoes topped with chopped cilantro and diced red onion. 

AIP compliant, yummy, crunchy sweet potato snacks!

Bulgogi (Korean)

1) Add 1 Tbsp coconut oil, 1 lb ground beef and 6 minced garlic cloves to a large skillet over medium heat. 

2) Crumble the beef, then stir in ½ cup shredded carrots, 1 tsp smoked sea salt, 2 tsp ground ginger, ¼ cup coconut aminos, 2 tsp creamed honey, 1 tsp blackstrap molasses, ½ cup bone broth, and 1.5 Tbsp tapioca starch

3) Saute until simmering and thickened.

4) Serve over cooked cauliflower rice or broccoli rice topped with thinly sliced green onions and raw sauerkraut.
