Hey guys! This is a quick recipe I threw together for road trips this summer. Summer has got me missing trail mix. You know the kind with smarties and nuts and raisins and maybe even pretzels! GASP! I know..I shouldn’t be thinking about pretzels but hey.. old habits die hard.

So I decided to make my own trail mix so I didn’t have to miss the less healthy non AIP friendly version.

Since I first made this recipe I have thought of so many other ingredients I could add to this recipe: dried cranberries, banana chips, carob chocolate chunks, plantain chips, cinnamon! The possibilities are endless!

AIP Friendly Trail Mix

An AIP Friendly trail mix. Nut free (tiger nuts aren’t actually nuts).

Prep Time 5 minutes
Total Time 5 minutes
Servings 5 servings

Ingredients

  • 1/3 cup raisins
  • 1/2 cup tiger nuts
  • 1/3 cup dried apricots chopped
  • 1/3 cup dried apple rings chopped
  • 1/3 cup unsweetened coconut shredded or flakes

Instructions

  1. Measure out raisins, tiger nuts, and unsweetened coconut. Put in a medium sized bowl
  2. Measure out the apple rings and apricots. Chop into small bite sized pieces. Add into the medium sized bowl.
  3. Mix all ingredients together with a spoon. Sprinkle with cinnamon if desired. Split into 5 servings (containers or bags) for an easy portable snack.

Recipe Notes

Feel free to add other dried fruits, nuts/seeds if you tolerate them, carob chips or chocolate chips if successfully reintroduced. I also think banana chips or plantain chips would be good mixed in as well.
