I adore recipes like this which require zero cooking and just a few simple steps to whip together. It’s almost like cheating in the kitchen!
This light but satiating side dish or snack is naturally dairy-free, gluten-free, nut-free, seed-free, and refined sugar-free. It also just happens to be Ketogenic as well as Whole30 compliant. Yay for a much healthier, low carb AIP pasta that the whole family will love!

You can totally add some extra ingredients to jazz it up even more! Here are some great AIP-compliant additions that you might like:
Grilled, diced chicken breast – Make it a meal!
Cooked baby shrimp – Add some sea-faring protein.
Sliced or halved kalamata olives – Look for nightshade versions brined with just salt and grain-free vinegar, like this one.
Thinly sliced red onions or green onions – Add some kick with these sulfuric veggies!
Shredded carrots and/or purple cabbage – Add some crunch and nutrients. Toss these in just before serving to retain their color!
To spiralize or grate your zucchini? That is the question.
Not everyone owns a spiralizer that creates those mesmerizing oodles of noodles from varying vegetables, and that’s ok! If you don’t have one yet but have been meaning to invest in one, they have become much more affordable these days. I love the Paderno which can be found for around $25 US on Amazon at the time of writing this.

In case you do not own a spiralizer (or you simply don’t feel like digging it out of the cabinet…I get it!)…no worries at all. You can instead just grate your zucchini on a cheese grater and still have a delicious pasta substitute that resembles short, thin strands instead of long curls. It’ll taste the same and still be free of the gluten and grains in conventional pasta, which is the end goal!

AIP Chilled Zucchini Pasta Salad (Paleo, Whole30, Keto)

Ingredients
- 1 batch AIP Pesto Sauce (recipe in NOTES)
- 3 medium zucchini
- Sea salt or Herbamare, to taste
- ¼ cup nutritional yeast (optional)
- Fresh basil leaves for serving (optional)
Instructions

Make the AIP Pesto Sauce, then set aside.

Trim the ends off the zucchini. Spiralize or grate the zucchini into thin noodles.

Add zucchini noodles to a large mixing bowl. Tear them apart with your hands in a few places to shorten the length of the noodles a bit.

Add AIP Pesto Sauce, salt or Herbamare, and optional nutritional yeast over the top of the noodles. Use tongs to toss gently until noodles are evenly coated.

Chill if desired for 2 hours or overnight. Serve immediately or serve cold.

This looks so good! I have zucchni in my garden this year. When I make it to enjoy at home, I will definitely add some meat and fresh basil, as I have a pot of that growing nicely on my porch. If I bring it to a gathering, I think I’d leave any meat additions out and add the black olives. I will definitely be adding grated carrots to mine, too. Thanks so much for all these wonderful recipes. You are making my AIP diet so much easier to follow! I have a zoodle machine and have forgotten it is tucked away in my pantry, until I saw this recipe!

I too often forget to take my spiralizer out…I store it away so it doesn’t get dusty but then it “gathers dust” LOL! Your basil, carrots, and olives additions sound so, so good. Olives are one of my favorite AIP quick snacks, too.
